Getting creative with weekday lunch

 

I have a question for those of you who work from home... What do you eat for lunch?

I was doing great for a few weeks, as we always tend to have lots of leftovers around, but for some reason this week, it's been slim pickings. This sad situation has made me realize that I don't have a lot of great options in the fridge for lunch. Yesterday, for example, I ended up going to Costco for a hot dog. This wasn't the healthiest option, but it was ridiculously affordable. $1.69 for a giant hot dog and a soda!

Today I actually DID have some leftovers to choose from, and I made the rice salad you see above. I grabbed a leftover (cooked) ear of corn, one tomato, 1/2 avocado, some leftover Greek salad dressing and a half pint of brown rice and threw it all together in a bowl. It was tasty!
