Raspberry Pie
This is sadly not a recipe. This is an ode. An ode to the Raspberry Pie at Shaw's Crab House in Chicago.
You know those foods that are so delicious you can taste them at any moment just by thinking about them? You close your eyes, think of the food item in question, and you can fully just taste it.
That is how I am with Shaw's Raspberry Pie.
I am not a pie person. I don't much care for Apple Pie. I hate cherry and blueberry pie. But, oh, this pie. It is just so good.
The crust (as you can maybe see here?) is super thin, and not very "crusty." It is more like a wafer thin sugar cookie. The sugar on top is crunchy and abundant. The berries are the focus. There is no space wasted on weird gooey fillers. There are no competing flavors like citrus, cinnamon or nutmeg. It's just BERRY.
If you are ever in Chicago, do try it. And if you are with ME at Shaw's, get your own. Because I don't share the Raspberry Pie.
