The Perfect Weeknight Meal
I love my husband. Really, I do. But, I think he kind of fancies himself a restaurant critic, especially in my kitchen. I know what you're probably thinking. You're thinking, "Danielle, that seems kind of dumb! Why, you have very heavy and deadly cast iron pans in that kitchen! What kind of a freak would say anything but kind things about your food?"
I jest (kind of). Michael just likes things the way he likes them, and what's the point of marriage if you can't tell your spouse to add more salt to the beef stew?
ANYWAY, last night I earned four stars my friends. Following this meal, Michael exclaimed that it was one of my top ten EVER. I've been cooking for him for over 12 years, so that's a big deal.
The recipe was originally in the Los Angeles Times, but I found it on Wednesday Chef. (She always has the best recipes.) I used boneless, skinless chicken thighs instead of bone-in, and green olives instead of black, but otherwise everything was the same. It was truly delicious, and even Dylan ate her entire plate (Max was too feverish to eat.) We got home at about 5:10, and were sitting at the table eating by 6.
