Dinner for One
My little man is sick. He has Hand, Foot, and Mouth Disease. I'm pretty sure he got it from the park, which is pretty damn gross. I'm trying to ignore the grossness factor and focus on making him comfortable. He has blisters on his tongue and throat and a rash all over his butt, chest, hands and feet. He is so sad. He won't eat much because the blisters are so painful. I gave him rice pudding for dinner, and he ate the whole serving which was great.
Last night, he woke up every two hours, so we were both pretty tired this morning. I knew he wouldn't eat, and Michael is away. I wasn't up to cooking a major meal just for Dylan and myself, so I let her choose her own meal (Annie's Mac and Cheeese), and I made up a dinner for myself after I got Max to bed.
This was a perfect dinner for me. I'd love to eat this way more often. I toasted a piece of multigrain sourdough bread and topped it with extra virgin olive oil and some slices of Mahon cheese that I bought at Whole Foods this afternoon. I couldn't resist buying a chunk when I realized that I was smelling it from five feet away. I can't resist stinky cheese. I accompanied my cheese toast with some slices of pepper salami and a tossed salad of Boston lettuce, grape tomatoes and Dijon vinaigrette.
To drink? Cheap red wine.
